French born Aurélien Blanc has completed the hotel management school in Polgny, France before he went to Dijon for another year of education and became a sommelier. He spent most of his career in family run, Michelin starred restaurants. After working in the Swiss mountains for several years, the Pavillon at the Baur au Lac was the only restaurant that he found attractive enough to move to the city. Since 2008, Aurélien Blanc works for the Pavillon. After more than seven years in the position of Chef Sommelier and Beverage Manager, he enthusiastically took over the position of the Restaurant Manager at the beginning of 2016.
